Despite this reputation and high demand, there are relatively few of these sharpening stones on the market because Naniwa produces a limited quantity of Jyunpaku. Naniwa Jyunpaku must be immersed in water for a few minutes before use. Compared to cheaper water stones, you will find that this sharpening stone does not need much extra water and absorbs it really well. Therefore, you won't have to wet the stone as often when you are sharpening the knife. Dark metal particles are, of course, very visible on the light sharpening surface, so we recommend that you clean the surface of the stone after use with a product designed for this purpose. This way the stone stays nice and white.
