- Extremely long-lasting and shock-resistant knife. It is strongly recommended to use for cutting only, as the feed is not great for rough work.
The properties of K390 are quite excellent, with good toughness, very high wear resistance and sharpness retention. Vanadis 8 and CPM-10V offer similar properties, although none of the three have been widely used in knifemaking. The combination of strength and wear resistance is unmatched by any stainless steel. The high content of very hard vanadium carbides means that both knifemakers and large knife manufacturers tend to complain about the difficulty of grinding and polishing this steel.
