Authentic Japanese Mioroshi Izumo Deba a type of kitchen knife made in the traditional way from tamahagane type steel. This knife is designed for professional fish processing - filleting, head separation and boning - while maintaining excellent cut control.
The blade is characterised by with an asymmetrical Japanese slope, for precise, clean cuts and excellent control. The tight pentis provides strength, while the progressively forward tapering geometry allows precision work.
The distinctive feature of this knife is its steel - Izumo Tamahagane.
Unlike modern steels, Tamahagane is made using a traditional smelting process called tartar, where iron sand is converted into high-purity steel by intensive charcoal heating over a period of days. This method has been preserved for centuries and remains one of Japan's most prized cultural heritage sites.
Izumo Tamahagane is special because it is the only officially certified Tamahagane made in Japan today. Strictly controlled in Shimane Prefecture, this steel is recognised by the Japanese Agency for Cultural Affairs and is supplied to licensed swordsmiths for the forging of authentic Japanese swords (nihontō). Each batch is carefully graded and documented, and therefore has an authenticity that no other tamahagane on the market can boast.
Due to their rarity and certification, knives from Izumo Tamahagan are extremely difficult to find. They combine the legendary sharpness and blade retention of this steel with the cultural value that comes from having a piece of living Japanese tradition.
