A European chef's knife with the classic length and shape of a European chef's knife, but with the sharpness of a true "Japanese". The extremely hard and sharp steel core is surrounded by layers of softer steel on the left and right side to prevent corrosion and possible breakage, e.g. if the knife falls. This technique is called "San Mai".
The TWIN CERMAX handle series is made of Micarta, a material that is pleasant to the touch and not afraid of external and chemical influences. The blade hardness of 66 HRC ensures the right sharpness for a long time.
The series combines innovative design, high quality materials and the traditional craftsmanship of Japanese knife makers. The smooth and bevelled geometry ensures a clean cut without tearing the material to be cut.
Cryodur. The knife is hardened at a low temperature of -196°C, which stabilises the steel structure. A heat treatment is also applied to ensure long-lasting sharpness and an extremely impressive blade hardness. The inner core of the blade is made of special powder steel ZDP-189. This makes the blade extremely hard and also ensures optimum cutting results.
The handle is made of Micarta, a laminated material made of synthetic resin and linen treated with heat and pressure. The ergonomic shape of the knife makes it very comfortable in the hand. At the same time, it remains stable and surprisingly sturdy. Handle it by hand only and dry it immediately after use.
